The Fuss-Free 3 Course Dinner Menu

One of the best things about our new place (aside from the fact that there’s a cat flap in the bathroom window which always make chuckle/worry that one day a cat will knock on its taped-up door and want to be let in) is that we’re finally in a space that’s sizeable enough to entertain people and have family and friends round for dinner. Of course the emergency chairs still have to be brought out, but we’re no longer sitting on each others laps and knocking elbows as we eat. I love to cook and feed people up because I’m slowly becoming a clone of my Mother so we’ve really enjoying having people over and cracking open a few bottles of wine #Adulting. The one thing I’m not so keen on though are dinners that take a tonne of time and mean you’re stuck in the kitchen. I’m all about prepping early in the morning and rustling it up later in 10 minutes. Tasty, speedy food is where it’s at. We made this little 3-course number a few weekends ago when my family popped over for dinner. Everyone loved it, plates were scraped clean and we all had extremely full bellies after – result. If you’re unsure of what to throw together for dinner tonight then I highly, highly recommend this…

STARTERBBC Food’s Focaccia with Garlic and Rosemary. Now this wasn’t the easiest or quickest to make, but the dough could be made before everyone came round and Mark quite enjoyed pretending to be Paul Hollywood. It didn’t take hours and hours, but it tasted so good. We served it just before dinner and everyone went mad for it. With oil and balsamic vinegar for dipping – OH YES.

MAINGizzi Erksine’s New York Style Meatballs & Gravy with Courgetti. I love how easy this is to make. I made the sauce in the morning and moulded my balls too. Then I left them in the fridge to cook later along with the courgetti which was all ready to go. I bake my balls because there is too many of them to fit into a pan and then just warm them through with the sauce just before serving. So quick. So easy. So tasty.

DESSERTBBC Good Food’s Best Ever Tiramisu. Oh my word – this was seriously incredible and so ridiculously easy to make. It literally took Mark and I about 15 minutes to do; just a bit of whipping and dipping sponge fingers in coffee. The only issue was that we didn’t have a fancy serving dish so popped it in our baking tray that we usually make lasagnes and pasta bakes in. Shhhh – no one noticed.

The best bit is that there was plenty of dessert leftover, so for the whole of Monday it’s all I ate. What Monday blues, eh?
