Three Speedy & Healthy Breakfast Ideas

Breakfast is my favourite meal of the day. I’m just like my Dad. He could quite happily eat a bowl of cereal for breakfast, lunch and dinner (and snacks!) and I think I could easily do the same. Give me a pack of Coco Pops and I’m there. However, I’m trying to crack down on my excessive sugar consumption so breakfast for me recently has been one of the following three recipes that I’m sharing today that aren’t too much of  a pain in the arse to prep, don’t take ages to make in the morning and taste pretty darn good.

The first recipe is one that I’ve done round here before – remember my Breakfast Muffins? I’ve tarted them up a bit with some new flavourings, but they’re still the same light and fluffy texture and they’re high in protein to keep you going till lunchtime. They’re a bit of a faff to prep, but once you have the recipe down you’ll be able to rustle them up from memory and it won’t take you any longer than 10 minutes to do. I’ve also mastered the way to remove them from the tin without them becoming scrambled eggs – hello silicone baking tray!

I do love a bit of a bircher muesli/overnight oats type of recipe and this cherry bakewell one is fast becoming my top choice. Really you can throw in whatever fruit you can get your hands on, but a dash of almond flavouring, paired with cherry always makes me feel like I’m having dessert for breakfast; which is basically my ultimate dream. Because if there’s one thing that I favour over breakfast, it’s dessert. The good thing with this recipe is that everything can be prepped the night before, so in the morning it’s as easy as grabbing your spoon and tucking in.

Finally I’m all about this apple and cinnamon quinoa porridge that was inspired by a recipe that I spotted in Niomi’s book. It’s basically the protein-dense version of porridge and has a texture that’s slightly smoother and a bit more nutty. Don’t be put off by its appearance and its taste on first impressions as it’s something that you get used to and now I’m truly a fan. WOW – I’m really selling it aren’t I? It uses the Apple Sauce recipe that I’m always going on about, which is great thing to have in the fridge because it works well in baking, and also just for general snacking too whenever you’re feeling peckish.

….well, you all know what I’m having for lunch today. Bring on the Cherry Bakewell Bircher.
